Douglas Guimaraes - Master Baker

The Baker

“Before sourdough was fashionable, it was necessity. Before scale, there was discipline. Before branding, there was bread.”

Douglas Guimaraes brings over 30 years of discipline to the oven. His journey began in Colombia, shaped by his father Joe's dedication to craft and quality—a legacy that lives on in every loaf.

In Panama, Douglas was a key contributor to The Bread Company, an early pioneer of modern bakery culture in the region. He helped introduce a new model for bread—one built on consistency, discipline, and respect for the process.

But trends come and go. Systems scale and collapse. What remains is the work itself.

Today, Douglas has returned to the essentials: organic flour, water, and salt. No additives. No shortcuts. No trends chased.

Based in San Antonio, Joe's Artisan Sourdough honors the legacy of Joe Guimaraes while bringing decades of sourdough mastery to Texas. Each loaf is baked by Douglas Guimaraes, carrying forward a tradition of discipline, patience, and four ingredients only.

Time over speed.
Process over volume.
Ingredients over marketing.
Mastery over novelty.

This is not a new bakery. This is not a startup. This is the continuation of work that has been happening quietly for decades.
