Time is not an ingredient. It is the process itself. Thirty-six hours minimum. No shortcuts.

Organic flour. Water. Salt. Everything else is noise. This is not minimalism—it is clarity.

A proper score is not decoration. It controls expansion. It reveals structure. It earns its place.

We were baking sourdough when it was necessity, not fashion. The work has not changed.

The oven knows. Temperature and humidity are not variables—they are requirements.

This is the work of Joe. I am simply continuing it. The bread does not care who holds the peel.
